Created by Chef Lesle, this comforting twist on matzo brei starts with eggs, crisped matzo, and a sizzle of schmaltz or butter—pan-fried until golden and tender. Just before serving, it’s finished with a spoonful of Subarashii Kudamono Asian Pear Spread, adding gentle sweetness and a bright, elegant contrast to each bite.

4 eggs
1 tsp. sugar
½ tsp. salt
¼ tsp. pepper
4 matzo crackers
3 Tbsp. schmaltz (chicken fat), butter or a combination of both
