Dried Asian Pear Lunchbox Salad

Preparation

  1. In bowl, soak handful of dried pears in ½ cup warm water. Squeeze lemon juice of 2 wedges into mixture. Grind in salt & pepper (1 to 2 grinds each). Cover & shake until dried pears soften.
  2. Rip romaine leaves and fill bowl. Cover & shake lightly so that leaves are covered in mixture.
  3. Enjoy! A refreshing salad with no oil! Serves one.
